Katsuramuki is the Japanese term for slicing cylinder-shaped vegetables, such as a cucumber, into thin sheets. It is considered an art by itself, but is especially impressive when the sheets are formed into aesthetic shapes.

Kyoko Katsuramuki-0

Usuba bōchō is the traditional Japanese knife used for this special cut, which it can accomplish due to its length and straight, thin edge[1].

Kyoko Mogami went through several years of cutting her fingers while training herself to do this in order to impress the Fuwa family with her usefulness and show them her gratitude for looking after her.[2][3]

Katsuramuki was featured when Kyoko successfully demonstrates her skill in the first round of auditions for LME.[4] This scene was included in both the anime and live action adaptations.
